Sibling of Proof + Pantry, Madrina marries French techniques with Mexican cuisine in a cool, sophisticated setting that balances fine dining with a casual vibe. Chef David Fingerman, a 28-year-old Chicago native, does a creative spin on dishes such as halibut with a cocoa mole, oxtail empanadas, lobster en croute, and an horchata pot de creme.
