Bright Fort Worth chef selects on-trend cuisine for new restaurant

One of Fort Worth's brightest chefs has a new restaurant in the works, focused on a cuisine that's on the rise in North Texas. Marcus Paslay, chef-owner of Clay Pigeon, will open a second restaurant called Piattello Italian Kitchen this fall in Fort Worth's new Waterside development.

Piattello will serve "comfortable Italian fare," according to a release, including house-made pasta and pizza. The restaurant will be open mornings as Piattello Coffee Bar.

Piattello means "plate" in Italian, but it also refers to the term "clay pigeon," which obviously has relevance for Paslay.

Paslay opened Clay Pigeon in 2013. A release lists the publications and media outlets in which he has appeared: Food & Wine, USA Today, Men’s Journal, Men’s Health, Good Day Fox 4, Fort Worth Star-Telegram, Texas Monthly, 360 West, Fort Worth Texas Magazine, D Magazine and more.

Huh. All of those publications, and no mention of CultureMap.

Paslay also just appeared on CBS This Morning: Saturday, where he made rack of lamb and discussed his departure from business school to enroll in the Culinary Institute of America.

Clay Pigeon is a from-scratch seasonal kitchen with a rotating selection of dishes made with the freshest ingredients, including fish and meat butchered onsite, house-made flatbreads, pastas, and ice cream, as well as seasonal craft cocktails.

Piattello Italian Kitchen will feature a from-scratch menu of hearty Italian dishes. So that's the difference, see.

Italian openings as of late include Saint Rocco at Trinity Groves and Americano at The Joule hotel, both in Dallas.

Waterside is a 63-acre mixed-use development under construction at Bryant Irvin Road and Arborlawn Drive. Tenants so far include Whole Foods Market, REI, Sur La Table, Taco Diner, Zoes Kitchen, Blaze Pizza, and Tokyo Joe's.
