Preston Hollow Village is already emerging as a good restaurant destination, and there's one more in the works: The Drawing Board Market & Grille, a combination meat market and classic steakhouse.
Owner Aubrey Simmons says that Drawing Board will have an "old world" feel.
"It'll be a meat market that happens to have an exquisite service-oriented restaurant attached to it," she says. "We're taking it back to a 1920s steakhouse feeling. When a customer walks in for the first time, everyone will already know who he is."
Simmons' father Larry Williams, who is owner and founder of Amberjax, but who started working in steakhouses when he was 13 years old. "We're basically taking a step back to the beginning," she says.
The Drawing Board menu will have a steakhouse-style structure, with steaks and family-style sides.
"I can tell you up front, it will be only locally grown meat and locally grown produce," she says. "And the meats that are not locally grown will be heritage, like Berkshire pork chops.
"We're planning on doing small-plate appetizers and family-style side dishes, with the intent to order a few proteins and have a bowl or two of sides in the center of table," she says. "We'll have heritage meats and wild game such as buffalo, elk, moose, pheasant and quail."
There'll be a top shelf bar, no craft cocktails, but wine and beer. They're interviewing for a chef, and intend to start construction in mid-April with a soft opening in August and a public opening in September. Decor will be "traditional, small-town, 1920s-30s New York industrial era," she says.
At the top of their list is attentive service. "We're in such a fast-paced age where people can't be bothered with the details of service, when someone wants to sit and enjoy a coffee," she says.
