Homey, folksy chain featuring fried chicken was founded in 1981 when Paul and Mary Beth Vinyard opened Bubba’s near SMU in a former Texaco service station. Babe's — after Mary Beth's nickname — followed in 1993 in Roanoke. The menu has since expanded from its original tight focus to include some of the area's best fried chicken, along with chicken-fried steak, smoked chicken, fried catfish, and family-style sides such as mashed potatoes, corn, and green beans. Each of the nine branches boasts historical items in the decor, with tables and chairs salvaged from other restaurants and homes.
