Belly & Trumpet, in the old Bowery space, is a collaboration between Oak owners Tiffanee and Richard Ellman and interior designer John Paul Valverde. Brian Zenner, chef de cuisine at Oak, oversees the menu of creative — and always changing — sharable plates executed by his sous chef and former Rosewood Mansion on Turtle Creek colleague Rudy Mendoza. Think Niman Ranch pork belly with kimchee, daikon and chicharrón; Cornish game hen with cauliflower, fois gras and raisin; or lamb shoulder with eggplant, almonds, prunes and couscous.
