Veteran Dallas restaurant team to open taqueria with authentic CDMX tacos
A promising new taqueria with great credentials is about to open in Dallas: Called Tacos El Metro, it's a venture from Sergio Cuijano, who previously worked with chef Julian Barsotti as beverage director for restaurants such as Nonna, and Alan Russell, who previously owned Burgundy Swine Wine Bar in Victory Park.
The culinary theme: Mexico City street tacos, mostly authentic Mexican although with what Russell calls "some gringo stuff," as well. It fulfills a longtime dream by Quijano to open a restaurant serving the street food he grew up eating in Mexico.
With a name inspired by the CDMX transit system, the restaurant will open in mid-April at 3720 Walnut Hill Ln., in the space previously occupied by kitschy dive bar The Velvet Elvis.
“The idea is to bring the true Mexico City street food to Dallas,” says Russell. “But also, to do food that's credible. It's not trying to be like Velvet Taco or those kinds of concepts. We’re not trying to appease anybody. It's just like, ‘Hey, this is how they do it in Mexico City.' We really wanted to mix the cultures in, and kind of bridge that gap."
Overseeing the menu and running the kitchen is chef Michael Garcia, a native of Peru who previously worked as executive chef at Fachini, Barsotti's Italian-American restaurant in Highland Park Village.
"Sergio and I have always been really good friends - he knew he could trust me to take the recipes he had at home, and apply them to a restaurant setting," Garcia says.
They began doing pop-ups in fall 2023, both at their location and at bars and breweries such as Oak Cliff Brewing Co. and Strangeways in East Dallas, trying out recipes including tacos and tortas.
They narrowed it down to a fairly simple menu, featuring tacos with fillings such as beef, pork, and trompo. Plus a specialty dish: slow-roasted pork ribs, deep fried, and covered in sauce.
"The star of the show is whole roasted pigs," Russell says. And to that end, from the dining room, guests will be able to see whole hogs on display behind a window, next to a rotating tromp.
The space will have several large TV screens for sporting events and late-night hangouts. They'll also offer a full bar program, but focused primarily on tequila-based cocktails. Basically: cerveza and tequila.
