    Local brewers collaborate on first beer-kombucha hybrid in Dallas

    There's a one-of-a-kind new beer in town that combines beer with kombucha, the fermented tea drink that's said to have health benefits. Called Holy Rooster Prickly Pear Kombucha Beer, it's a collaboration between beer brewer Four Corners Brewing Co. and kombucha maker Holy Kombucha, both based in Dallas.

    The beer is a friendly 2.8 percent ABV and has a prickly pear flavor — like one of Holy Kombucha's bottled drinks, but with a little alcoholic kick. According to Holy Kombucha founder Leo Bienati, the partners are seeking feedback from kombucha fans and beer fans alike. If it turns out to be successful, they'll make more.

    "We would love to see this in packaged format in the near future, but there's a lot to learn in this process," Bienati says.

    Bienati's tasting notes describe it as offering fruit tartness and funky tones, but without heavy sugar. It has a fragrance of honey-lemon, berry and earth, and a finish of citrusy, lemon-zest, honey and mild prickly pear sweetness.

    He's reluctant to call it a sour but says it could fall, loosely, under that umbrella. For beer brewers, the problem with sours is that they have bacteria that can contaminate the brewing equipment.

    "We've had to work closely and carefully on bringing the two together without infecting our system," Bienati says. Without offering much detail, he says it's a mix of a finalized brewed batch of beer with a completed batch of kombucha that is also somehow brewed together.

    "Balancing the two to achieve our flavor target has been the biggest challenge," he says.

    Kombucha's appeal lies in the beneficial aspects of its bacteria, which Bienati says can survive in the beer medium, but they don't know how long. "We want to keep the benefits intact," he says.

    Though this is the first such hybrid in Dallas, it's not the first kombucha beer ever; that honor goes to Unity Vibration in Ypsilanti, Michigan, who introduced two kombucha beers in 2010.

    If Holy Rooster Prickly Pear Kombucha Beer sounds good to you, you should try it sooner rather than later. For now, it's a limited-edition release that's expected to last only a couple of weeks.

    It is available on tap at select Whole Foods Markets (Park Lane, Lakewood, Highland Park, Colleyville and Addison); at Luck restaurant in Trinity Groves; and at the Bottle Shop on Greenville Avenue.

    If all goes well, the kombucha-beer hybrid could be packaged for sale on store shelves.

    Indian-inspired Nirvana Lounge opens at Irving's Toyota Music Factory

    A swanky new lounge blending music and global cuisine is now open in Irving: Called Nirvana Lounge, it just opened at the Toyota Music Factory at 340 W. Las Colinas Blvd. #200, in the former Mercy Bar & Lounge space.

    According to a release, Nirvana Lounge is from Tivona Group, creators of upscale Indian restaurant Sanjh, and aims to deliver a transportive experience, weaving together rhythmic beats, the flavors of Indo-Chinese cuisine, and a sophisticated yet electric atmosphere.

    The menu is an homage to layered flavors of India and China with plenty of sharable dishes.

    “Our menu, developed by the acclaimed culinary team behind Sanjh, is a bold exploration of flavors that seamlessly blend the spice and vibrancy of Indian street food with the wok-fired depth of Chinese cooking," says Tivona President of Operations Probodh Arora in a statement. "We’re excited to introduce North Texas to Indo-Chinese Cuisine, an exhilarating fusion, paired with an atmosphere that invites guests to lose themselves in the rhythm of the night."

    Featured menu items include:

    • Kathi rolls – Indian street food wraps filled with aloo (potato), paneer, or chicken, wrapped in warm paratha and finished with house made chutneys and spices
    • Hakka Noodles – thin, eggless noodles tossed with vegetables and an umami-rich sauce
    • Gobi Manchurian – crispy cauliflower florets glazed in a spicy, tangy sauce
    • Salt & Pepper Shrimp – shrimp stir-fried with onions, green chili, and crushed black pepper
    • Chicken 65 – a fiery South Indian classic featuring crispy chicken tossed in a blend of curry leaves, mustard seeds, and dried red chili

    The cocktails are crafted to transport customers to the bustling spice markets of India and the cosmopolitan energy of Hong Kong. Drinks include an Old Fashioned with sandalwood-infused mezcal, sandalwood syrup, and Peychaud’s bitters; a tequila drink with cilantro and tandoori-roasted pineapple; and Monk Meditation with Indian dark rum, espresso, cinnamon, and brown butter.

    Additionally, they’ll feature entertainment including DJ nights with Indian beats, Latin grooves, and international sounds.

    The space features moody neon lighting, surreal art installations, and plush textures.

    Nirvana Lounge will also offer bottle service with a selection of spirits, from Clase Azul Reposado and Glenlivet 18 Years to Dom Pérignon and Perrier-Jouët.

    "Toyota Music Factory was the perfect home for Nirvana Lounge because it embodies the spirit of live music and dynamic entertainment," says Tivona Group CEO Sanjay Joshi in a statement.
