Jeff Harris, executive chef at Bolsa and Bolsa Mercado, heads west to Restaurant Ava in Rockwall to join chef/owner Randall Copeland in a preparation of Sunday night dinner. Diners will get five courses for $49, with wine pairings for an additional $35.
The menu begins with a cauliflower tasting: crispy florette with truffle aioli, soup with brown butter and black trumpets, pickled romanesco, purple cauliflower.Second course is monkfish with Benton's country ham, grilled octopus, eggplant purée, white beans, barking cat peppers, mustard greens and preserved lemon. Third course is duck confit ravioli with sweet onion espuma, roasted beets and Brussels sprouts. Fourth course is Wagyu vavette and beef belly pastrami with toasted oats, red wine-spiced yogurt, cabbage, mushrooms, celery root and mustard jus. For dessert, it's kabocha squash cake with huckleberries, buttermilk and pecan ice cream.
