Dallas Fish Market will present Sake & Kaiseki, a six-course dinner featuring Japanese-inspired dishes, each specially paired with Sake.
Menu includes:
Amuse:
- Umeboshi - pickled plum, yellowfin ahi, toasted ground sesame, upland cress
- Paired with Hakutsuru Awa Yuki Sparkling
First Course:
- Sake Steamed Wakasa Tilefish - salted begonia leaf, ground glutinous rice, ginger juice, basil blossoms, babu arae
- Paired with Ozeki Platinum Junmai
Second Course:
- May Hassun - chimaki-zushi (sushi rice/glutinous rice) ahi tuna, Japanese pepper leaf buds, bamboo leaf
- Paired with Ozeki Karatamba Hojozo
Third Course:
- April Yakimono - broiled tofu, egg sauce, tangerine lace
- Paired with Kasumi Tsuru Kimoto Extra Dry
Fourth Course:
- March Yakimono - cherry salmon, miso marinade then cherry smoked, mint blossoms
- Paired with Yoshinogawa Winter Warrior
Dessert Course:
- Crispy Rice Pudding - sushi rice, dried blueberries, gingered carrot coulis, carrot sourbet
