The Fairmont Dallas and Nobilo winemaker David Edmonds host a four-course wine dinner beginning with a reception at 6 pm and dinner at 6:30. New Zealand wines are the highlight as pairings include chilled poached sea scallop, tobiko aji amarillo mignonette and pickled chervil with Nobilo “Icon” sauvignon blanc and roasted New Zealand lamb rack, buttermilk potato puree, glazed root vegetables, roast garlic and rosemary jus with Kim Crawford Small Parcels “Rise and Shine Creek” pinot noir.
