Chef Tim Byres of SMOKE, Chicken Scratch, Bar Belmont, The Foundry, Outpost American Tavern and SMOKE Plano (opening this fall) will present recipes from his James Beard-nominated cookbook, Smoke: New Firewood Cooking. Based on primitive cookery and outdoor entertaining, Smoke: New Firewood Cooking gives innovative ideas for ways to use smoke in your everyday kitchen, such as making salsas with charred peppers, grilling fish with wood planks and using smoke-cured meats to add layer to a dish. Chef Byres will be preparing dished from his cookbook as well as discussing various cooking methods.
