Famous TV bakery surprises Dallas’ Preston Center with designer cakes
A New Jersey-born bakery that's a favorite of TV food channels is expanding to Dallas. Carlo's Bakery, featured on Cake Boss and known for pastries, desserts, and designer cakes, will open a branch in Preston Center.
The bakery is going into the former La Madeleine space that closed in late 2015. Carlo's baker Buddy Valastro sings Dallas' praises in a release, saying that "the city is filled with charm and warm hospitality, it really is the perfect fit."
One hopes that the Carlo's in Dallas will be filled with more charm and warm hospitality than the New Jersey branch where the staff seemed less than receptive to questions about the new Dallas branch. Love that crisp Northeastern spirit.
Carlo's was originally opened in 1910 by Carlo Guastaffero, then acquired by Bartolo Valastro Sr. in 1964. It's currently run by matriarch Mary Valastro and her children Buddy, Grace, Maddalena, Mary, and Lisa.
Signature pastries include cannolis, crumb cakes, butter cookies, ruchelach, pound cakes, and custom cakes. One of their most popular items is the lobster tail, a crisp-yet-delicate pastry filled with French cream that's laced with Bailey's. Spokesperson Nicole Valdes tells the mythical tale of how Buddy, a frequent guest on Food Network and in bridal publications, overcame the initial trouble he had with the recipe.
"One night, his dad came to him in a dream and told him how to make the dough, and after that, he was able to make it," she says.
Carlo's has branches in Connecticut, New Jersey, New York, Philadelphia, Las Vegas, and Orlando. Dallas will be the 13th location, and is scheduled to open in March.
