Uchiba Dallas sushi restaurant unfurls innovative new all-veggie menu
Chef Tyson Cole's Dallas outpost Uchibā is introducing some new culinary "programming" that includes a ramen dinner on May 21 with participation from the man himself, IE Tyson Cole. But that is totally burying the lede.
The restaurant is also launching a new weekly "veggie nights" every Sunday, beginning May 20.
What is this? A seafood restaurant, make that a famed seafood resturant, is doing a non-seafood menu.
On Sunday Veggie Nights, chef Alex Astranti — who performed so magnificently at CultureMap's recent 2018 Tastemaker Awards event, where he served hamachi coco, with coconut zu, grapes, fennel, and candied quinoa — has created an exciting new weekly event featuring an all-vegetarian menu of shareable plates and specialty cocktails, all inspired by classic Asian flavors.
According to a release, the Veggie Night menu will be available every Sunday starting May 20 alongside Uchibā’s regular menu.
Guests both vegetarian and omnivore will love the new unique veggie bites, including:
- Asparagus Nigiri
- Hot Fried Veggie Buns
- Yucca Frittes
- Eggplant Bao
The menu will change seasonally to reflect the freshest vegetable ingredients possible.
Uchiba is the more casual restaurant that sits atop Uchi, Tyson Cole's famed sushi restaurant, which opened in Dallas in 2015. Originally the second-floor space was called Top Knot, a new concept in the Uchi family that featured buns and hand rolls and salads.
In early 2018, Top Knot was reconcepted into Uchiba, which incorporates elements of Uchi yet expands that into a cocktail experience.
Meanwhile, the Uncommon Ramen event will take place on May 21. The series started in 2015 as a pop-up with guest chefs such as Stephan Pyles, John Tesar, and Aaron Franklin collaborating with chef Alex Astranti on memorable ramen dishes.
Reaction was so positive that the restaurant turned it into a monthly series on the last Monday of every month. It continues with a roster of chefs that will include Jen Jasinski, Tommy Lee, Blaine Staniford, Kathryn Caine, Jonathan Thompson, and Omar Flores.
