Fun smash burger joint with Dad Jokes theme is coming for Frisco

Dad Jokes Cheesyburger
A burger restaurant with a side of corny jokes is coming to Frisco: Called Dad Jokes Cheesyburger, it's a mom-and-pop that will open in the Frisco Rail District at 8981 2nd St., in the former LottieBird’s creperie space.
Dad Jokes is from Clayton and Gabby Jones, who started the concept as a part-time food truck in 2024. Clayton came from the BBQ world, working for more than 20 years for Rudy's Bar-B-Q.
It was his goal to own a restaurant with his family by the time he turned 45, so he left Rudy's in April 2025 to dedicate his time to Dad Jokes.
Gabby says their goal is "to celebrate the dads in our lives and bring some laughter."
Their menu is dominated by smash burgers, starting with the Cheesyburger with American cheese and mayo. The Smoke Stack is a double brisket-and-chuck patty with cheddar cheese, bacon jam, lettuce, pickles, and grilled jalapenos. They also do a veggie patty called Livin’ on the Vedge, with a black bean patty, lettuce, tomato, pickles, and red onion.
In addition to burgers, they have chicken sandwiches and hot dogs.
At the restaurant, which they hope to open in July, they'll serve beer and wine, and will also carry pints of Plano-based Henry’s Homemade Ice Cream, which was a big draw when the space was LottieBird’s, which closed May 18 after four months.
The couple is currently updating the interior which will feature booth-style seating and a color scheme of black, white, and yellow.
“We will feature historic photos from downtown Frisco, as well as pictures of actors and comedians who inspired me," Clayton says.
Ultra-corny Dad jokes are an entire genre of humor, with Twitter accounts, celebrity competitions, and more, but this surely has to be the first restaurant with a Dad joke theme.
As part of that theme, they distribute a dad joke, printed on a thin, fortune cookie-style strip of paper, with every order. (Sample Dad joke: "I told my burger a joke… but it didn’t ketchup to it in time.")
“My kids buy me joke books and cards, and I love the comedic classics,” Clayton says. “I just wanted a place that when you heard the name you smiled, and it grew from there. Every burger comes with a joke, and we encourage our guests to leave their favorite Dad Joke, which we feature in the restaurant and on social media.”
