New taqueria Senor Oink in Farmers Branch is all about pork carnitas

A taco restaurant specializing in pork carnitas has opened in Farmers Branch: Called Señor Oink, it’s in the Mustang Station Center at 12990 Bee St. where it opened in June.
Señor Oink is from restaurateur Mauricio Gallegos, who also owns the Mexican coffee shop Xaman and its attached speakeasy, Ayahuasca, in Oak Cliff.
“Señor Oink is our most focused concept — it’s a true carnitas taquería, the way you’d find them in Mexico,” Gallegos says. “Traditionally, when you go to a carnitas spot back home, that’s all they serve. No fusion, no long menus, just different cuts of pork done right, with great tortillas and salsas.”
The menu features pork carnitas tacos from four cuts of pig meat: rib, stomach, pig’s skin, and shoulder.
El Rumbero has pork shoulder with pineapple and chili de arbol sauce. The Oink Supremo has pork skin with fire-roasted salsa and guacamole. There's one veggie taco with mushroom, zucchini, and avocado. Tacos start at $5.
They also sell carnitas by the pound, plus carnitas bowls, carnitas tortas, and carnitas flautas.
Other items include appetizers such as guacamole topped with pork skins, and esquites — corn with sour cream.
Gallegos is running the kitchen alongside chef Leonardo Hernandez, who was previously the chef at Yellow Rosa, a Mexican cocktail lounge in Deep Ellum.
The restaurant has a bar with beer and cocktails such as the Charanda Swizzle, made with Michoacán’s native rum; and a few mezcal drinks. Gallegos says he “kept it simple, refreshing, and a little sweet to balance the richness of the carnitas.”
“Señor Oink is all about honoring a single tradition with care and intention,” he says. “One of my favorite taquerías in Oaxaca, Lechonsito de Oro, left a big impression on me; I’ve always been drawn to the energy and flavors of Mexico’s coastal towns, so we brought some of that vibe into the branding and experience.”
