    Virgin Hotels Dallas reboots restaurant with new chef and culinary focus

    Dallas Design District's Virgin Hotels Dallas is giving its culinary program a reboot with a new chef and menu theme. New executive chef is Andy Papson, who previously worked in luxury dining in Miami and the Florida Keys, with Davidson Hospitality Group and Sonesta Hotels.

    Papson will lead all culinary operations at the hotel, including its upscale restaurant and bar Commons Club, as well as its rooftop pool club, banquets, and catering.

    Plans include more seafood and Creole flavors, with dinner dishes such as snapper ceviche, shrimp & grits, scallops, short rib osso buco, and his key lime pie, which has been named the best key lime pie in south Florida.

    The brunch menu also gets a revamp, with the addition of items like a smoked salmon platter, blackened snapper sandwich, eggs benedict, and vegan pancakes.

    The hotel restaurant, which opened in 2019, previously focused on French-inspired cuisine with an emphasis on dishes cooked via live fire and house-made pasta.

    “These culinary creations are a reflection of my life’s journey,” Papson says. “My background in New Orleans and South Florida, combined with my deep love for the ocean and diving, have been instrumental in the dishes I’ve brought to Commons Club Dallas.”

    Beyond the kitchen, he’s a man of many hobbies. He’s a certified master scuba diver, and he’s used his scuba skills to explore the Florida Keys, the Turks and Caicos islands, and the famous Blue Hole in Belize.

    In addition to his key lime pie fame, Papson’s resume includes accolades such as Chef of the Year for Davidson Hotels, Chef of the Month in Baton Rouge, and Best Dish Award at New Orleans Food & Wine Experience.

    To match the re-envisioned menu, the hotel’s bar program has introduced new cocktails, named after Texas musicians, such as the Rhinestone Highway, butterfly pea flower-infused vodka, vanilla, and lemon nectar; and the Ya Se VA, rell bell pepper-infused tequila, ancho reyes chile liqueur, agave, and firewater bitters.

    6 new restaurants touch down in Dallas in a mini-flurry of openings

    Summer is not traditionally a time for openings in the restaurant world — closures is more like it, and Dallas has had its share of those. But in a welcome turn of events, we're enjoying a small wave of new places opening their doors: from a food hall kiosk serving burgers and hot dogs to a coffee shop popping up for the summer to a venerable cookie shop expanding for the very first time.

    Here are six concepts that have opened across Dallas:

    In Good Company is the name of a new kiosk that just opened at The Exchange Hall at the AT&T Discovery District in downtown Dallas. The concept is from the owners of Easy Slider and replaces the Easy Slider kiosk, which had been there for three years. "We're excited to introduce In Good Company," their statement says. "Same location, same team, with a fresh take on lunch counter classics: sandwiches, hot dogs, & burgers, of course. ⁣⁣Inspired by our tight-knit team and the downtown community we serve, this next chapter is all about good food and good company."

    Peaberry Coffee has opened a new pop-up location that'll be open all summer. It's located at 660 Fort Worth Ave. #120, following the closure of the Kiestwood location at 2446 W. Kiest Blvd. after seven years in search of a new location. The coffee shop comes from owner Elijah Salazar who first opened it in 2019. They offer canned iced coffees, lattes, dirty chai, and cold brews.

    JD's Chippery, the Dallas-based cookie shop, has opened a new location at 6025 Royal Lane at Preston Royal (a very buzzy intersection right now). JD's is from the Broad family—Julie, John, and Amy Broad— who opened the first location in Snider Plaza back in 1983. The shop is beloved for its warm cookies, muffins, cookie cakes, iced tea, lemonade, and fan-favorite cherry limeade.

    White Rhino Coffee, the local coffee shop chain, has opened a location at Cypress Waters in Coppell at 8955 Cypress Waters Blvd. #102 — their 13th in DFW. The menu includes brewed coffee, espresso drinks, teas, baked goods, scratch-made food items, and their new line of alternative energy drinks called Chargers.

    Einstein Bros., the fast-casual bagel chain founded in Lakewood, Colorado, has opened a location in Garland at 4170 Lavon Dr. #120 in Firewheel Town Center. The menu includes bagels, breakfast sandwiches, pastries, and coffee.

    Little Joy is a new coffee shop at 2105 S. Edgefield Ave., in the former B-Side Coffee space. B-Side regulars Russell Tibbitts and Allison Macalik bought the shop in May. They're keeping the coffee program largely the same, but with more seasonal coffee drinks. On the food side, they're adding sandwiches, like pesto chicken or grilled cheese, and charcuterie boards.
