There's a new bakery in Lewisville offering stunning cakes and desserts: Called RT Bakery & Cafe, it’s at 3964 State Hwy. 121 #250 in The Realm at Castle Hills mixed-use development, where it opened in December 2024.
RT does pastries, croissants, Danish, tarts, and a wide array of cakes, executed with perfection. They sell whole cakes, cakes by the slice, and other pastries you can enjoy on site with beverages including coffee and espresso drinks.
The bakery is from husband-and-wife Rajesh Awasthi and Tanya Romanova; Tanya is the baker, but Rajesh assists during busy times. She started it out as a home bakery in 2006, shortly after moving to the U.S. from Russia to join Awasthi, and sharpened her skills by taking online classes.
Looks are everything here: Their desserts are picturesque with an impeccable appearance that sometimes mimics the flavor, such as the Rose Raspberry Mousse Cake, which looks like a giant rose with pink frosting petals; inside are precise layers of cream, raspberry mousse, and raspberry cake.
The Snickers mousse cake is a decadent oval-shaped confection coated in a chocolate nut-flecked shell, with mouse, caramel, and nuts inside. They use special techniques to achieve that kind of roundness. The secret lies in their use of shaped molds and edible gloss which give the exterior a mirror-like finish.
The bakery is European-style in that it is less sweet than American-style desserts, with a more dominant presence of fruit rather than sugar.
“To make the perfect tart, there should be a crispy tart shell and the flavor combination should play well together," Romanova says. “For the perfect cake, flavors should go with each other and the cake should not be overly sweet.”
In addition to cakes, there's a selection of tarts in flavors such as peach, mango, lemon poppyseed, coconut, and apple, which boasts a clever decorated cap that looks like a green apple, with a dark stem at the top. Tarts and cake slices are $8.75; most whole cakes are $65.
She also does custom cakes with elaborate designs for birthdays and special occasions.
The interior of the bakery is bright and modern, with marble design tables, plush emerald green chairs, and chandelier lights, plus a display case showcasing their featured desserts.
Transitioning from the home bakery and online culinary classes, opening a bakery with more kitchen space not far from home was always a goal.
"I've been baking since childhood," Romanova says. "It is close to our house and we wanted to bring European-style, unique desserts to our community."
