Simple instructions for cooking vegetables everyone will devour at dinner
A lot of attention gets paid to meats and main courses, but side dishes deserve equal love.
In this second installment of Cup of Content, food and lifestyle expert Roni Proter demonstrates the easiest way to roast veggies — cauliflower, carrots, what have you — for a tasty addition to the dinner table.
The key, she explains, is to give the vegetables plenty of room for hot air to circulate inside the oven. After generously tossing with olive oil, salt, and pepper, spread the veggies evenly and heat at 375 degree for about 25 minutes. The result is a crisp, flavorful, and nutritious side dish.
Proter has more than a decade of television experience, both in front of the camera and behind the scenes, as a regular contributor to AOL, iFood.tv, Kitchen Daily, Good Morning Texas, Great Day San Antonio, and Veria Living. She created Dinner Reinvented as a lifestyle reporter for KDAF, the CW affiliate in Dallas, after she discovered the challenges of preparing dinner as a busy working mother.
