New Dallas ice cream shop near SMU opens with wild holiday flavors

The moment for ice cream draws near with the imminent opening of Baldo's Ice Cream Scoop Shop Café, going into the old Goff's space at 6401 Hillcrest Rd.
According to a spokesperson, the shop will open in late November, hopefully in time for visits with relatives in for the holidays.
Baldo's is named for a mythical character called Mr. Baldo, a whimsical, grandfatherly figure who has traveled the world, who serves as their logo and mascot.
The concept was launched by three SMU grads, Schuyler Grey, Tyler Kleinert, and Will Ammons, who've partnered with Aldo Sandoval, a former pastry chef at Uchi/Uchiba.
They're taking an "anything but vanilla" approach by featuring a variety of chef-inspired items on the menu, both hot and cold. In addition to ice creams in flavors you're unlikely to see anywhere else, they'll also do coffee drinks, loose-leaf teas, and baked treats including blueberry muffins.
Display is a key part of their formula. An open kitchen allows patrons to see everything being made.
Notable creations for their opening day include an ice cream flavor called "All the Trimmings" which will incorporate pine and other holiday flavors.
Other holiday-themed flavors include Chestnuts Roasting Ice Cream and White Chocolate Peppermint Bark Ice Cream.
They're also launching a Toasted Marshmallow Hot Cocoa Bar.
Baldo's has a mobile push cart, which can be spotted at the Arboretum and Klyde Warren Park, and is available for rental.
