Top Dallas bartender plays with thyme for herbaceous bourbon cocktail
Reed Bairstow loves herbaceous flavors, so the top Dallas bartender uses thyme as the star ingredient in the sixth episode of Old Forester’s Cocktail Chronicles. He says that thyme blends well with the orange and vanilla to bring out the back notes in Old Forester Bourbon Whisky.

Thyme Out Old Fashioned
Yields 1 drink
2 ounces Old Forester Bourbon Whisky
1 orange peel
1 sugar cube
3 dashes angostura bitters
1 teaspoon vanilla tincture
1 teaspoon orange and thyme oleo-saccharum
.25 ounces thyme-infused poppy liqueur
Fresh thyme
Muddle the orange peel, sugar cube, and bitters in a mixing glass.
Add the bourbon, vanilla tincture, oleo-saccharum, and liqueur to that same mixing glass, then add ice and stir.
Strain and pour over large format ice cube, then garnish with a bundle of fresh thyme.
