New restaurant in Dallas' AT&T Discovery District trots out cowboy cliches
AT&T Discovery District will soon welcome a new restaurant when the doors to Cowboy Chow open in late October. The new restaurant takes over the Jaxon space and is from Jack Gibbons, CEO of FB Society.
A release says it'll "embody Texas culture, innovation, and the spirit of Cowboys everywhere."
11-2-2023 UPDATE: Cowboy Chow is now open, with menu items that include Texas cowboy chili, a Trail Boss Burger, and Green Chile Chicken Chowder. It's open Sunday-Thursday 11 am-10 pm and Friday-Saturday 11 am-12 am, but closed Mondays.
This is a solo project for Gibbons, outside of FB Society, showcasing "his talent for restaurant creation and design." The menu includes:
- steaks
- enchiladas
- burgers
- salads
“This project was an exciting chance to work with two iconic organizations -- AT&T and Legends," GIbbons says in a statement.
The restaurant menu will draw inspiration from cuisines prevalent in the Western United States, including Texas, New Mexico, and Mexico. Gibbons says that Texas cuisine is often underrepresented.
"When we think about cowboys, we envision them as not only the hardest workers but also those who know how to have fun," he says. "This imagery is wrapped in big hats and big smiles, reflecting what we aspire to be as cowboys."
The restaurant design will include Texas-themed artwork and décor, large-scale signage including a photo-worthy art installation.
There will be giant TVs for live sports broadcasts and eventually a live music stage.
In August, Legends Hospitality was selected as the new management team at AT&T Discovery District, operating all dining, entertainment, and event experiences at the District.
