New Carrollton restaurant fixates on fajitas and margaritas to go
It's fajitas for everyone at Fajita Pete's, a new restaurant now open in Carrollton at 1008 W. Hebron Pkwy.
Fajita Pete's is a Houston-based Mexican restaurant with fajitas and margaritas — with a twist: they'll deliver.
Founder Pete Mora opened his first restaurant in 2002 as a traditional eatery, but was deluged by catering requests. Seeing an opportunity, he downsized the restaurant side and focused on catering and delivery.
Although they have a dining room where you can eat on the premises, their push is on their to-go operation. And not just fajitas to go, but margaritas, too.
That said, the to-go margaritas are not currently available in Carrollton. But franchisee Jose Recinos plans to add that later this year.
Their fajita setup comes with onions, jalapeño, tortillas, Mexican rice, refried beans, shredded cheese, pico de gallo, guacamole, lettuce, chips, and salsa. Fajita options include beef, shrimp, chicken, and veggie.
Other menu items include quesadillas, burritos, tostadas, carne asada, and tacos al carbon. They have guacamole and queso, along with entrees such as chicken enchiladas with verde sauce, chicken with portabella mushrooms, poblano pepper stuffed with chicken, fajita steak with poblano pepper, and chicken topped with pico sauce.
In addition to the Carrollton location, Recinos also owns the original DFW Fajita Pete's, at 6090 Campbell Rd, on the Dallas-Richardson line. That location has been open for eight years but Recinos took it over three years ago. It also does not have the margaritas to go.
"This location has been BYOB for a while," Recinos says. "We're keeping it that way because that's what people expect. We have a lot of fans who like the BYOB part."
The Carrollton location opened in a former pizzeria that had been empty for a few years. Recinos has plans for more locations around Dallas, in areas such as Irving an McKinney.
The chain has 10 locations in total, with the majority spread around Houston, and two more opening soon, in Midtown Houston and College Station.
