A Dallas restaurant group is unveiling a sizzling new concept: Called El Molino, it's a Mexican restaurant opening in Snider Plaza, and it's from Vandelay Hospitality, the group founded in 2012 by restaurateur Hunter Pond.
According to a release, it'll open in summer 2025 at 6818 Snider Plaza, where it will bring a "refined taste of Mexico" to the space previously occupied by Douglas Bar & Grill. Pond originally planned to open an Italian restaurant in the space called Montecito's but that has been scrapped.
The big thing at El Molino will be fajitas, which will get a "fresh, elevated" take in a variety of globally inspired forms, with a menu rooted in smoky, bold flavors in dishes such as smoked quail and smoked sausage. So much smoke. But will they have sizzle?
The space will be intimate and upscale, with 65 seats including a small 8-seat bar, inspired by the bustling energy and flavors of Mexico City and the refined elegance of French design.
The restaurant’s drink program will also feature an elevated margarita program, offering a refined and unique take on this classic Mexican drink. Guests can expect expertly crafted margaritas that complement the bold, flavorful dishes.
The design will be moody and sultry with dark wood, carpet, white tablecloth, and candlelight.
In a statement, Pond says they're thrilled to bring another unique concept to Snider Plaza.
"This restaurant fills a niche in the Park Cities dining scene by continuing to add moody and alluring ambiance dining experiences to the area, and transforming Snider Plaza into a must-visit dining destination for the city as a whole," Pond says.
Pond is all-in on Snider Plaza: He opened Jack & Harry's, a a New Orleans-inspired restaurant and bar, in spring 2024, and opened Bar Sardine, a an intimate Parisian bistro concept, in December 2024. Vandelay Hospitality's other concepts include Hudson House, Drake's, East Hampton Sandwich Co., and Anchor Sushi Bar.
