Japanese restaurant from Austin chef Tyson Cole readies debut in Plano
Plano finally gets a taste of Austin hipness via Uchiko, a Japanese restaurant from Austin chef Tyson Cole, coming to Legacy West.
The restaurant will open at 7801 Windrose Ave. # H150, in a new space across from Fogo de Chao. According to a release, it'll open on June 18.
Uchiko, which translated from Japanese means "Child of Uchi," was developed as a spinoff of Cole's Japanese restaurant Uchi, which opened a location in Dallas in 2015. Uchi and Uchiko both have locations in Austin and Houston.
Now Dallas — well, Plano — will get a Uchiko, as well.
“When we first opened Uchiko in 2010 in Austin, it was an extension of what we were doing at Uchi,” says Cole in a statement. “It has evolved organically, spurred on by the creativity of our staff and their desire to experiment with new techniques and flavors. I love what we are doing with fire and smoke at Uchiko and I am really looking forward to what Chef Steffen and the team will do in Plano.”
"Steffen" is Steffen Perico, Uchiko's chef de cuisine, who's joined by head sushi chef Dale Park, pastry chef Ariana Quant, and beverage director Jason Komas.
The menu features dishes like flounder with candied quinoa and karaage-style fried chicken, as well as smoked and cured meats, oysters, and roasted lobster.
One new element that will be unique to the Plano location is an option called For the Table: It's a family-style large format plating featuring a protein with sides for everyone at the table to share.
Options include:
- Bone-in Short Rib with gem lettuce and kimchi vinaigrette, $120
- Whole Branzino, a one- to two-pound whole fish for $65
- 45-day dry aged cowboy ribeye with yuzu kosho butter, sunomono, and Japanese sweet potato, for $90
“At Uchi, our dishes are clean and delicate with a particular focus on acidity. At Uchiko we view our technique through a more rustic lens, applying smoke and char to ingredients for a more robust flavor profile,” chef Perico says. “I’m looking forward to taking my Uchi experience and adding these elements into the mix.”
Uchiko will be open for dinner only, Sunday-Thursday 4-10 pm, and Friday-Saturday from 4 -11 pm.
The Plano opening comes nearly a year after its predicted due date of summer 2023.
Dallas is also home to Uchi sibling concepts Uchiba, a casual bar; and two locations of Loro, the Asian smokehouse and bar from Cole and Aaron Franklin, which debuted in Dallas in 2021 and opened a second location in Addison in 2022.
