New restaurant at Dallas' Trinity Groves features novel twist on pizza
West Dallas restaurant incubator Trinity Groves is rolling out a new eatery featuring the pandemic-friendly cuisine of pizza.
Called Holy Crust, it's a concept by Trinity Groves founder Phil Romano that he says pays homage to the type of pizza his mother used to make him growing up.
Holy Crust does not follow the typical approach of baking crust, sauce, cheese, and toppings together. Instead, the chefs sauté the toppings, then place them on the crust. The heat from the toppings melts the cheese.
A release says that this technique results in better flavor and texture.
The menu has 16 options including classics like pepperoni alongside creative concoctions like Avocado & Egg and Veal Marsala.
There are also sandwiches, such as the Italian Yardbird or the Dripping Pig with slow-roasted porchetta; and salads served in a pizza dough bowl.
Their wine program is a "pour-your-own" honor system, in which guests can choose between red, white, or rosé and fill their own glasses with the selected jug on their table. Just like what Romano introduced at Romano's Macaroni Grill way back in 1988.
Other beverage options include draft beers, Italian cocktails like the Aperol Spritz and Negroni, and shots of house-made limoncello.
Decor consists of a bright white interior, and there's Italian music playing in the background, just like Romano first introduced when he opened Eatzi's way back in 1996.
“I’ve been eagerly waiting to unveil this concept, which is very special to me, as it honors my own mother,” Romano says in a statement. "My mom’s pizza is still my favorite way to eat the dish, and I hope to convert Dallas diners to this unique and delicious version we’ll be serving at the restaurant."
Beginning August 6, the restaurant will be open 11 am-9 pm Monday-Thursday and Sunday, 11 am-10 pm Friday and Saturday, and will also be available on all major delivery platforms.
Diners who want a sneak peek can stop in for a soft-opening preview on August 3, 4, or 5. Limited reservations will be available at 6 pm and 8 pm, and meals for indoor or al fresco dining will be 50 percent off, excluding alcohol. To reserve your spot, call 469-329-0707.
