Cute butcher shop-cafe from celebrity chef opens in Dallas' Knox District

They'll have meat and pastries and cheese and sandwiches.

There's a new shop coming to Dallas' Knox Street area for people who like meat. Georgie by Curtis Stone, the restaurant in the Knox District, will finally open The G Butcher Shop, its companion butcher-sandwich shop at 4514 Travis S., #132, with a forecast date of early March.

Stone is the Los Angeles-based Michelin-starred chef, restaurateur, author, and culinary entrepreneur. In 2014, he opened his first solo restaurant, called Maude, in Beverly Hills, then opened Gwen Butcher Shop & Restaurant in Hollywood with his brother Luke Stone. So there's a precedent for this restaurant-butcher shop thing.

In Dallas, Stone collaborated with restaurateur Stephan Courseau, owner of Le Bilboquet and Up on Knox, both located nearby. Georgie opened in November 2019, but they teased the coming butcher by hanging cuts of meat hanging from the window, setting carnivores aflame with desire and anticipation.

The G Butcher Shop will be quaint and draw its inspiration from France. It will also double as a casual eatery, open for breakfast and lunch, with counter and patio seating. They'll serve gourmet sandwiches made to order at lunch, and pastries for breakfast sourced from sister restaurant, Up On Knox, plus fresh, organic squeezed juices.

In addition to meats, they'll have prepared foods including rotisserie chicken, charcuterie, terrines, and dairy from Brazos Valley Cheese and Brush Creek Creamery.

"The G Butcher Shop is committed to provide the highest quality meats that have been brought to market in a manner that is in line with our principles," says Courseau in a statement.

In-house butcher is Mike Lawson, who was previously executive sous chef for Gemma and Sachet, and was in charge of the cured program at Oak Cliff's Macellaio. He's also worked for Mario Batali in Las Vegas.

Courseau says that Lawson is known for his mastery of butchery and is part of a movement known as ethical butchering.

"We're passionate about meat," Lawson says in a statement. "We are proud to offer products that have an emphasis on high ethical standards with unique flavors."

The G Butcher Shop will be open Monday-Friday at 8 am for breakfast; 11 am-3 pm for sandwich service; and until 6 pm for retail. On Saturday and Sunday, The G Butcher Shop will be open 11 am-6 pm.

Snap Kitchen adds market to stock fresh local groceries in East Dallas

A healthy to-go shop in East Dallas is expanding its offerings beyond prepared entrees to include goods from regional bakers, small food makers, and more: Snap Kitchen is transforming its store at 4115 Skillman St. (at Mockingbird Lane) into Snap Kitchen & Market.

Dallas is the first to get the new market format, where customers can still pick up Snap's chef-prepared entrées, proteins, and breakfasts, but now they'll find a larger selection of groceries, including seasonal organic produce, sourdough, refined-sugar-free treats, honey, spreads, and dairy from Texas farmers, bakers, and creameries. Even the new snacks, sauces, and beverages have a shop-local focus, a release says.

New offerings include:

Specialty pantry: Snap-prepared sauces and spices, honey, jams, ferments and spreads
Artisan bakery: Fresh Sourdough and refined-sugar-free treats from Texas bakers
Marinated proteins: Ready-to-cook premium cuts, prepped in Snap's own kitchens, free of seed oils
Dairy: Local creameries and clean-label staples
Fresh produce: Seasonal organic fruits and vegetables
Expanded snacks and drinks: A wide variety of better-for-you Texas-based brands

The new format reflects how customers are using Snap Kitchen, store leaders say - not just for prepared meals, but also to stock their own pantries with healthy staples and snacks.

"Our Skillman customers already trust us with their weekday meals, so we asked what else we could take off their plate," CEO Steve Bloom says in the release. "Snap Kitchen & Market is our answer: bringing the same standards we apply to our own meals to a broader selection of Texas-grown, Texas-made and thoughtfully sourced foods. We've done the vetting, so our customers can shop with confidence."

On a happy comeback from a number of pandemic-era closures, Austin-based Snap Kitchen continues to operate stores across Dallas-Fort Worth Houston, and Austin, preparing every meal from scratch in its Fort Worth kitchen.

To celebrate the launch of the new Snap Kitchen & Market concept, the Skillman-Mockingbird store will host a grand reveal on Sunday, October 4, from 9 am-8 pm, followed by a series of free in-store events throughout the month including chef tastings, meet-and-greets with local food makers, and a Q&A with Snap’s registered dietitian.
