Dallas-Fort Worth chef of Hell's Kitchen fame goes healthy with new eatery
Chef Kalen Jane, who earned international fame as a contestant on Gordon Ramsay's Hell's Kitchen, will helm the kitchen at Protein Fit Kitchen, a unique concept opening in Southlake with chef-prepared, nutritionally balanced meals that are simply overflowing with protein.
The concept is primarily to-go, but customers can also dine inside or on the patio. It'll open in early July at 1151 E. Southlake Blvd., and will be open daily from 7 am-7 pm.
Customers will have a variety of options in how they choose their meals. You can get a week's worth of healthy meals or you can order your customized meal at the counter. Why, you can even order online and pick up your meal when it's convenient.
There are also cold cases filled with prepared meals and snacks, all in disposable plastic containers, although for dine-in, they use biodegradable bamboo plates, cups, and forks. Doesn't it seem like all these companies launching to-go businesses should be required to factor in the repercussions of their business model?
The menu takes special diet requirements to new highs: It includes vegan, vegetarian, paleo, ketogenic-friendly, and gluten-free options.
The menu includes options for breakfast, lunch, and dinner, with snacks and "mylkshakes" made from nondairy milks. The Fit Bowl has eggs, turkey sausage, black beans, peppers, greens, avocado, and pico de gallo. Pancakes are made with banana, oats, vegan protein powder, and fruit. Buns, aka sandwiches, include smoked turkey, sprouts, cheddar, apple, and bacon jam in a low carb wrap, and a house-made black bean burger with lettuce and tomato on a gluten free bun.
Specials include chipotle lime chicken, teriyaki sirloin, and turkey meatballs. Sides include lentil, quinoa, and black bean pasta, and apple-cabbage slaw. There are protein snack packs, Greek yogurt parfaits, and salt and vinegar roasted chickpeas.
Kalen Jane was on season 13 of Hell's Kitchen. She attended the Art Institute of Tennessee Nashville, then worked at the Patterson House and the Gaylord Opryland before returning home to Fort Worth in 2012. She cheffed at Tillman's Roadhouse, which later became FW Market + Table.
