    Smoke 'em if you got 'em

    Chef Kenny Bowers is all set to smoke at his new BBQ joint, and we got a firstlook at the menu

    Kenny's Smoke House, the new barbecue place from chef Kenny Bowers, has taken receipt of its shiny red Oyler smoker machine and has a revised opening date of January 21.

    The smoker model is the "Little Red Smokehouse," a wood-burning unit that takes up less than 10 square feet of floor space and can therefore be squeezed into a crowded kitchen.

    Bowers, who also owns Kenny’s Wood Fired Grill, Kenny’s Burger Joint and Kenny’s Italian Kitchen, will open the Smoke House with partners Mike Hutchinson and Bob Stegall at the Shops at Legacy. It will go into the old Rice Boxx space, which is a prime spot right on Legacy Drive, a few doors down from Starbucks.

    Dallas chef Misti Norris is now serving fancy fare in Quonset hut

    Acclaimed Dallas chef Misti Norris has resurfaced: The James Beard-nominated chef is now culinary director at Far Out, the East Dallas restaurant and bar located in a Quonset hut at 1906 S. Haskell Ave.

    Norris was most recently chef and owner of Petra and the Beast, the highly personal restaurant she founded in 2018; it closed in December 2024.

    Far Out opened in December 2024, taking over the space previously occupied by Wriggly Tin, a short-lived restaurant and brewery that opened in November 2023. It's had some turnover since it opened and it closed down in September 2024, for what were called "internal changes."

    According to a release, Misti will frequently update the Far Out menu to reflect seasonal offerings from her favorite local vendors. Her menu is already in place with telltale ingredients. Here's a classic Misti dish, now on the menu: "Profound tomatoes, preserved lime, crispy pig ears, confit tomato, pressed little gem."

    Other dishes include

    • Smothered Texas tri tip, potato cake, French onion sauce, farmdal cheese
    • Crispy chili and pecan rubbed Berkshire spare ribs, preserved apricot, cilantro, mojo
    • Texas strawberry cobbler, thyme whip, pickled strawberries, burnt strawberries, mint

    Norris will also help oversee another phase of the project: the development of The Outlands, an expansion into the full 3-acre property that will soon include a private taproom, a working greenhouse and micro farm, and an incubator and residency program for developing creative talent from the surrounding area.

    “At Far Out I’m excited to be in a position to educate a team in ways to improve sustainability," Norris says. "That will include incorporating fermentation and preservation, but it’s not only technique. It’s about rethinking what we consider waste and recognizing what still has life in it.”

    The project is the latest venture from restaurateur Christopher Jeffers, who was part of the team that opened restaurants such as Bolsa, Chicken Scratch, Smoke, and The Theodore.

    Petra's closure stemmed from the fact that it had moved to a larger space in Lakewood, but it started out in a former 1930s gas station at 601 N. Haskell Ave. — so now Misti is back on Haskell Avenue.
