Rollin Smoke Barbeque from Las Vegas brings Southern BBQ to Dallas
A new barbecue restaurant has opened at Dallas' Trinity Groves: Called Rollin Smoke Barbeque, it's a small chain based in Las Vegas, and it's now serving brisket and ribs along with a whole menu of home-style food.
The Dallas restaurant is from John McLaurin, a first-time restaurant owner and franchisee who will operate the franchise as a family-owned business.
He's tweaked the menu to be more Texas-friendly, with home-style country sides and hickory-smoked barbeque.
“I am excited about being a part of the fabric of Dallas,” McLaurin says in a statement. “My focus will be on quality food, employee retention, and giving back to those who served in the military and law enforcement.”
Rollin Smoke was founded in 2012 by two friends from Arkansas who wanted to share Arkansas-style barbecue, and the chain prides itself on its distinctively Southern-style approach. The menu varies slightly from location to location, but includes ribs, smoked chicken, sliders, pulled pork, hot links, brisket, rib tips, catfish, shrimp, and hushpuppies.
You can buy meat by the pound, in a sandwich, or on plates. They also have a smoked meatloaf served with "loaded" mashed potatoes with sauce and fried onion strings that's been featured on the Travel Channel.
Sides include dirty rice, green beans, yams, fried okra, collard greens, and cornbread. Housemade desserts include peach cobbler, banana pudding, ice cream sundaes, and root beer floats.
According to a release, McLaurin spent his career as a contractor for the American government. During his time working with the U.S. military, he would only be home for one to two months a year. After returning home to Fort Hood, he decided he wanted more time with his wife and three children, and settled on Trinity Groves as the best place to open a business.
During the restaurant’s soft opening in July, he hosted the Run for the Blue 5k at Trinity Groves, supporting fallen and wounded officers and their families.
Trinity Groves partner Sam Romano calls McLaurin a fresh addition to Trinity Groves.
“We like to work with people who are trying something new - and John has a clear direction on the type of service he will provide and the mouthwatering southern barbeque will absolutely have customers coming back for more," Romano says.
