Dallas' storied Rosewood Mansion on Turtle Creek finally names new chef
At long last, the Rosewood Mansion on Turtle Creek has a new executive chef: Tom Parlo. He'll oversee the cuisine and menus throughout Rosewood Mansion on Turtle Creek, but with particular emphasis on the Mansion Restaurant. He'll begin his new duties in October.
His appointment comes nearly a year after the departure of prior chef Bruno Davaillon, who is opening a restaurant at the 400 Record building in downtown Dallas.
Parlo grew up in Florida and has worked at hotel restaurants such as Mandarin Oriental Miami, Four Seasons in New York, St. Regis Bal Harbour, Biltmore Hotel in Coral Gables, and Hotel Granduca in Austin.
In a release, Parlo says the standard stuff about using local ingredients.
"Texas has a great network of passionate local farmers producing excellent ingredients, which I hope to showcase in sophisticated yet accessible cuisine," he says. "Farmers and foragers who pour love and energy into produce create the finest ingredients, and I truly believe in cooking from the heart."
He'll start futzing with the menus in November.
